Garden Kitchen Recipes: Spicy Bean Soup

garden kitchen cafeThe Garden Kitchen Café offers home-made soups, salads and smoothies. Many of their ingredients are being grown just outside the kitchen in the courtyard at the Healthy Living Centre. They have agreed to share some of their delicious recipes with Digital Sentinel readers starting with this month’s recipe Spicy Bean Soup.

Spicy Bean Soup

  • 1 tbsp oil
  • 1 red onion
  • 1 garlic clove
  • 1 tsp cumin
  • 1 tsp dried coriander
  • Pinch chilli flakes
  • 1 tsp chilli powder
  • 2 cans red kidney beans
  • 1 can chopped tomatoes
  • 1 tbsp tomato puree
  • 1 stock cube
  • 150ml water
  • Handful fresh coriander

Sweat oil, onion and garlic and add chilli powder, cumin, chilli flakes and dried coriander. Return to heat. Add tomatoes, beans, stock, puree and half coriander and simmer for 10 minutes. Blend till smooth.
